Very Wild Rice Salad

INGREDIENTS
Salt
1 cup wild rice (uncooked)
1/2 cup finely chopped dried figs (we’ve used dates/currants/golden raisins etc.)
1/3 cup chopped toasted pecans
1/3 cup chopped toasted cashews
1/4 cup finely chopped green onion tops
2-3 stalks of celery, chopped
1/2 red onion, chopped
2 Tablespoons red wine vinegar
1 Tablespoon lemon juice
1 clove of garlic, minced
1 teaspoon of dijon mustard
1 teaspoon sugar
1/4 cup vegetable oil
1/4 cup olive oil
INSTRUCTIONS
Combine 4 cups of water and 1 teaspoon of salt in a saucepan and bring to a boil. Add the rice. Reduce heat to medium-low, cover and simmer until the rice is tender, about 45 minutes. OR use packets of Trader Joe’s microwaveable wild rice. Ready in like 5 minutes.
Transfer the rice to a large bowl. Mix in the figs, pecans, cashews, green onion tops, celery, and red onion.
Mix the vinegar, lemon juice, garlic, mustard and sugar in a bowl. While stirring, gradually pour in in the vegetable and olive oil.
Pour the dressing over the rice mixture and toss. Season with salt and pepper to taste.

On vacation in La Jolla with my big, loud, very uncool (in the best way) family. We are the nerds at the beach with many tote bags and zinc noses. We range from a week shy of 2 and 95 years old. We did absolutely nothing trendy and we barely made it out alive. But here is what we did do:
We walked to Wayfarer and it was established, once again, that ham and cheese is the superior croissant to almond. Don’t at me.
Each morning, I escaped to Bird Rock, before anyone else was awake, for my allotted me-time.
We kind of celebrated Father’s Day, but kind of also forgot about it.
We went to Balboa Park and saw the Monet to Matisse exhibit.
We saw Top Gun four weeks after everyone else in the world did.
We walked to Oscar’s fish tacos once, instead of every day, like we should have.
We sat by the pool.
We reapplied SPF (the goat) and still got a little too much sun.
We talked over each other.
We started happy hour whenever we wanted to.
We slept on horrible mattresses.
We played the yacht rock playlist I made for my mom.
We ate Cocoa Puffs and had dinner outside.
It was all so classically summer.
It was overwhelming in the way that only a big, loud, very uncool family can be.
And it was wonderful in that way that makes you realize you’ve got it pretty good.
