We're coming up on a year. And I've officially cooked all of the things. From jammy eggs to banana bread to brothy beans to seasonally inspired cocktails to pastas in all shapes and sizes. Slow cooked chicken, crispy chicken thighs, salty roasted chickens. Piles of rotting soft herbs in my fridge and pints of melty McConnells in the freezer. Dishes and dishes and dishes and dishes and dishes and dishes.
I'm tired. I'm over it. I’m sure you are too.
It's time to run the good ones back and phone it in for a few weeks. Starting with this one. Top of the list forever.
Sheet-Pan Sausage With Peppers and Tomatoes

INGREDIENTS
1 pound fresh sausage (I like to go to the butcher and a get a few different options)
You can use any veggies here, but this is the combo the original recipe suggests... I've swapped and added pretty much anything. The key is to make sure they're all about the same size so they cook evenly.
1 pound sweet or mild peppers, such as mini sweet peppers, bell or Cubanelle, seeded and sliced into 2-inch strips if large
1 pound cherry or grape tomatoes
4 garlic cloves, crushed with the skin left on while baking
2 shallots, peeled and cut into quarters
3 tablespoons extra-virgin olive oil
Kosher salt and pepper
INSTRUCTIONS
Heat the oven to 425º with a rack towards the top. Score the sausages in a few places on both sides, making sure not to cut all the way through. In a shallow baking dish or baking sheet, toss the sausages with the peppers, tomatoes, garlic, shallots and olive oil. Season with salt and pepper and spread in an even layer. Bake for 15 minutes then flip the sausages over and shake out th veggies in the pan. Bake for another 10 minutes.
Move the sheet to the broiler for 2-4 minutes to until the sausage nice and golden brown on the top and the veggies have a bit of color. If everything is charring too quickly, cover the pan with foil.
After you've taken the pan out of the oven, let is sit for 5-10 minutes so the sausage rests. Enjoy!
